Sea Bass Provençal Recipe

Sea Bass Provençal from Whole Foods Market by Joshua & Carol

Serves 4

This French Riviera favorite cooks in a delicious, flavorful sauce. Large ~~croutons~~ pieces of fresh sliced French Bread are served alongside to soak up all the good flavors.

Nutrition

Per serving (about 23oz/652g-wt.): 750 calories (150 from fat), 17g total fat, 3g saturated fat, 120mg cholesterol, 880mg sodium, 70g total carbohydrate (6g dietary fiber, 10g sugar), 66g protein

Ingredients

5 tablespoons extra virgin olive oil, plus more for brushing
1 baguette, cut on an angle into 1/2-inch thick slices
2 1/2 cups thinly sliced yellow or white onion
1/2 cup chopped parsley
2 tablespoons chopped canned anchovies (optional)
1 tablespoon finely chopped thyme
6-7 garlic cloves, finely chopped
2-3 teaspoon crushed red pepper flakes (depends on how much heat you want)
1 1/4 pounds plum tomatoes, chopped
1 1/2 cup dry white wine
4 (8-ounce) sea bass fillets, each about 1-inch thick
Salt and pepper to taste

Directions

~~Preheat oven to 350°F. Generously brush olive oil over both sides of baguette slices, then transfer to a baking sheet and bake until lightly toasted, about 10 minutes. Set croutons aside.~~

Increase oven temperature to 400°F. Heat 5 tablespoons of the oil in large ovenproof skillet over medium high heat. Add onions, 1/4 cup of the parsley, anchovies, thyme, garlic and red pepper flakes and cook until onions begin to soften, about 5 minutes. Stir in tomatoes and wine. Season sea bass with salt and pepper, then arrange fillets in skillet so that the vegetables are on top of the fish. Bring to a simmer. Cover, transfer to the oven and bake until fish is opaque in center, about 10 to 12 minutes. Transfer fish to plates. Stir remaining parsley into sauce in skillet and boil gently until thickened, about 2 minutes. Season to taste with salt and pepper, then spoon sauce over fish. Serve with toasted croutons on the side.

Traditional art is used increasingly seldom and serious art collectors are grabbing up the contemporary pieces. Even if you are not a major collector, finding contemporary artwork for your own home will make you look like a serious collector. Do your research, go with your instincts and you will be able to find things you'll love to live with.

1. Don't base your art decisions on the color of your couch. While you don't want your art to clash with your furniture, don't dismiss an artwork you admire solely because the palette doesn't work. Eventually, it will all come together.

2. Presentation is important. Framing an artwork can be tricky, if done improperly it can cheapen an otherwise beautiful piece. Contemporary pieces usually don't need anything bulky. A simple black, white, medium wood, silver, or gold frame will work based on the temperature of the piece. A mat works well for photos.

Way back in the summer at Madison Square Park's BBQ Festival, we had the pleasure of trying some of the country's best BBQ-- all brought to New York City for our convenience. Ed Mitchell, legendary pitmaster of The Pit in Raleigh, NC was there with his whole hog sandwiches and the most delicious Apple Cider Vinegar sauce. Being from Kentucky, Alabama, Ohio, etc. we've had our fair share of BBQ. We thought this was the best. Men's Health featured Mitchell's recipe for Pulled Pork Shoulder. Here it is below.

Recipe: Pulled Pork Shoulder

“Barbecue's not a spontaneous thing,” says Ed Mitchell, who cooks his cue at The Pit in Raleigh. “It takes time and planning. But with barbecue, something good is about to happen.”

What you'll need

8–10 lb Boston butt
Apple-cider vinegar
2 Tbsp salt
2 Tbsp black pepper
1 Tbsp cayenne pepper
4 cups hickory or oak chips
10–15 lb charcoal briquettes
Hamburger buns

How to make it

1. In a deep dish, place the shoulder with enough vinegar and water to cover (2 parts vinegar to 1 part water), along with the salt, black pepper, and cayenne. Marinate in the refrigerator overnight (or at least 2 to 3 hours).

2. Follow this smoking technique, and cook covered for 31/2 to 4 hours, until very tender. Allow the meat to rest for about 30 minutes and pull pieces off by hand.

Coleslaw
1 cup Miracle Whip
1 tsp mustard (Dijon or yellow, to your taste)
1/2 cup cider vinegar
Salt and pepper to taste
2 bags slaw mix

How to make it

1. Whisk together all the wet ingredients and add the slaw mix. Toss to coat evenly.

Vinegar Sauce

1. Mix together cider vinegar, salt, pepper, crushed red pepper, and cayenne to taste. Use it to accent the pork's natural flavors.

2. Serve the pulled pork on a bun or on its own, topped with a dash of vinegar and with coleslaw on the sandwich or on the side.

Really enjoyed the first look-- the look of the four poster with elegant draping is so romantic, but not overly feminine. The asian elements and minimalism throughout the room is something that a couple can enjoy together. All of our drapery is custom created by our private seamstress Karen.

The second look has a zebra ottoman we have incorporated into several client homes. The zebra pattern is always seen in design magazines-- the bold pattern makes quite a statement and works in both modern and traditional homes. I also love the pairing of the Louis Ghost Chair with more plush furniture.

Metropolitan Home's Home of the Month is Kelly Hoppen's townhouse. We at Gage-Martin Interiors have long loved Hoppen's design aesthetic. To finally look into her home is seeing what the designer would create as an ideal setting. The result is clean, utilitarian and very monochromatic. Juxtaposed surfaces are smooth and shiny. The overall look is contemporary with carefully selected surprises in each room. While most of the design is sterile-- not in a bad way, just in a very carefully, infrequently lived in way-- the living room, bedroom and bathroom are the only spaces with a soft, soothing approach. The luxe fabrics, accessories and fresh cut flowers make the living room comfortable. I can agree with the glass and chrome hardware, as it serves its purpose in the kitchen.

Kelly's brother Michael owns a gallery at 3 Jubilee Place London, specializing in photography. It's certainly nice to know that we aren't the only ones to think that a design firm having a sister art gallery makes sense!

J.Crew has certainly come a long way-- this uptown store at 1035 Madison Avenue features their high end collection. The store was modeled after Jenna Lyons' New York apartment. We really love how they've incorporated major artists and given their stores a New York apartment feel. The presentation is inspirational as well as just a fun place to shop. Being a major retail corporation hasn't stopped J.Crew from individualizing their stores. Each store has a vintage feel-- especially the 'Liquor Store Bar' men's shop at 235 West Broadway New York, NY .

Casa Colonial Hotel & Spa

We recently had the pleasure of staying at Casa Colonial Hotel & Spa in Puerto Plata, Dominican Republic. With only 50 rooms, the hotel is very private and exclusive and located on the beach. The hotel has two restaurants-- one for breakfast and lunch and the other for dinner. Both restaurants were excellent, the cuisine is described as Dominican-Asian fusion with entrees. Also on site is the 12,400 square foot Bagua spa which provides full treatments and options such as a massage in the cabana near the beach. With full gym, rooftop pool & jacuzzis, fantastic mojitos-- why leave?

The architectural and design elements were what we noticed most. There is meticulous stonework throughout the hotel. The sand colored stones tie into the beach motif, while the white marble brings it to its luxury level. We also really enjoyed the stark white linens everywhere in the hotel, from the restaurants and lobby to the lounge chairs on the beach. The hotel does an extraordinary job of keeping the whites very white.

Seen on one of my favorite design blogs {this is glamorous}, a Swedish apartment on the market. The white minimalist space is the latest design trend. This is another great example of a good use of small space-- very practical and seemingly effortless. The closet looks like fairly inexpensive construction (Ikea), even so it looks very organized. We've done some gorgeous California closets for many of our clients and these are very high quality construction. The fireplace is exquisite, very unique with a great restoration job. The vintage pieces mixed in are also very quirky and full of character.

All in all, very quaint and becoming a real fan of the white with black elements. In Florida, this might seem a little lack luster. Gage-Martin might add some really high-end fabrics and just a few items that shout luxury.

Frank Lloyd Wright believed the hearth is central to the family, so he configured the fireplace to always be in the center of the house.

The sound of the warm, crackling fire is one of those comforting sounds. During a couple of months in the winter, it gets cold enough even in South Florida for us to make cozy fires.

The bottom two tubs are situated in rooms that may have been grand ballrooms, but hey I'm sure you'd enjoy this much more. The first image is a teak tub hand-carved by a ship-maker in what appears to be a greenhouse. Elegant, traditional and a woman's private time.

One's office, whether at home or work should be a haven-- a place to enjoy being in. After all, it's probably where one spends a majority of the day. By creating a space filled with beauty, one can create a better environment for working. An office should also be very functional.

weathered glamour

Something that has been really appealing lately is this look of weathered glamour-- not sure if I could live in a space with peeling paint, but it sure does look beautiful in photographs. I love the idea of modernizing the look of Louis the XIV with all of it's ornate over-the-top luxe. Modernizing it makes the space more livable. The crystal chandeliers, oriental rugs and ratty velvet chairs look like inherited old money-- then you move in and brighten it up with a hot pink egg chair, disco ball and little mementos. The small white apartment. In New York and many European cities, space is tight. I love this posting I saw on Desire to Inspire blog where small space is utilized in a smart way. Painting a room white and using white elements visually opens up a space. Keeping it clean and utilizing vertical space when there's a lack of horizontal also helps. I enjoy the bookshelves lining the walls. Not only do books reflect well on an individual, but they are a great way to decorate. This is inspirational for a minimal space. Sometimes eliminating all the stuff will clear your head. Simply basic. Then again sometimes we just like our beautiful little keepsakes.

West elm and Anthropologie both have great colorful knick knacks to fill shelves. A cost saving tip is to visit garage sales and flea markets. They're often filled with vintage vases and lamps.

Olivia Wilde- focuses on her photography and painting collection with English country in one room, Moroccan influence in another.

Tips: An easy project is to take simple family photos and digitally altering the images by making them black & white. Kodak's website offers quick and easy shopping options. Simply click the option to 'tint' black & white, add to cart and pay. 4x6", $0.09; 5x7", $0.89; 8x10", $2.99... and then frame with simple white mat and black or wood frame. The random arrangement is playful and creates an interesting composition for a dining room. Donatella Versace- This is more like the mansions we work with in Florida. It's over the top chic and romantic with ornate mouldings, archways and trim. Tips: You will find luxurious items at the Gage-Martin showroom. It's difficult to do this kind of over the top design on a dime. The furniture makes the biggest statement alongside the architectural details and Venetian plastered walls.

Campbell Brown: A New York style apartment comes with the lovely window a/c and painted radiator. She's introduced simple chrome elements in lamps and side tables, a Cowhide rug (not shown), and most importantly a large-scale chromatic painting.

Tips: Marks is my favorite artist for vibrant, contemporary works, you can also find his work at CHC Gallery New York.

Molly Sims: Uptown New York library/sitting room. The focal point of the room is the huge dark wood built-in and the sparkling chandelier.

Cooking for Two

Ingredients

2 servings (enough for a small appetizer)

1/2 bag of Baby Spinach

2 slices of Amish Cured Bacon

2 Eggs

1-2 teaspoon Balsamic Vinegar

1-2 teaspoon White Truffle Oil

Salt & Pepper to taste

Directions

1. Fry bacon in small frying pan until cooked, remove from heat

2. Boil eggs in water for about 10 minutes, remove and peel when done

3. Divide an equal amount of Baby spinach into 2 bowls

4. Pour 1/2-1 tsp Truffle oil on top of spinach in each bowl

5. Pour 1/2-1 tsp Balsamic vinegar on top of spinach in each bowl, mix

6. Cut bacon into bite-size pieces and add to mixture

7. Cut egg into larger than bite size pieces and add to mixture

8. Add salt and pepper to taste

Students of the ALICE studio at Ecole Polytechnique Fédérale de Lausanne have built a wooden structure for viewing the surroundings next to a lake in Zermatt, Switzerland. Read more at Dezeen.

Reminds me of Beijing Nat'l Stadium aka Bird's Nest Olympic stadium and a slightly of Huang Yong Ping's Tower Snake at Gladstone Gallery from this past summer. It's obvious the Swiss Evolver is askew vs. the concave weave of the Bird's Nest & convex Tower Snake. Overall similarities are The Bird's Nest at a much larger scale with it's spiraling, oblique design and Tower Snake also with spiraling effect and overall shape. It looks like the organic design is catching on-- even with Zaha Hadid's Chicago Eco-Pavillion, which can pack up and go.

This is just a spectator's opinion-- not well versed in architecture, nor possessing an architecture degree.

Many people have already blogged about this, but I'm sure there are plenty of people who haven't been exposed. This is Marit Fujiwara a BA in Textile design from Chelsea College of Art and Design. The intricate weaving in her design just floored me. I've never seen anything of this level of complexity. Susie Bubble of course was the first to expose this work. I just can't stop looking at it.

We've been long time fans of John Varvatos' line of men's clothes, shoes and accessories. When they opened the Bowery store in the old CBGB, they drew a crowd of protestors. Visiting the store shows how they preserved much of the old posters and graffiti from the old club days. It's perfectly designed for its purpose. The most striking thing is the massive chandelier hanging in the center of the boutique. Upon closer examination-- the chandelier is actually several chandeliers strategically arranged to trompe you into thinking it's one giant piece. Rock and roll perfection.

Roxy Paine at Met Museum

American sculptor Roxy Paine created a 130 foot long by 45 foot wide stainless steel sculpture for the roof at the Metropolitan Museum of Art, thru November 29, 2009.

Paine had an installation in Madison Square Park (New York) about two years ago. He creates organic, plant-like sculptures out of stainless steel in order to display the juxtaposition of the industrial and of nature. It makes perfect sense in New York City. Though the shiny metal stands out in a field of green in spring, during the winter months it seems as if the living trees turn into shiny, metal objects too.

The line averages $250-310 for a dress-- it's not cheap, but with his eponymous line of animal graphic dresses and tees priced around $2,000-3,000, this less expensive line is sure to draw a crowd.

One of the blogs I often read is Garance Doré. Her inspirational photos and sketches are full of life. She, like The Sartorialist and other street photographer/bloggers, travel around the world photographing people on the street with great style. She doesn't limit herself to the young and beautiful-- her subjects vary in age, but they all have an air of sophistication. The woman above was photographed by Garance in Amsterdam-- chic and age appropriate.

A lot of people may not be aware of how much your style influences how one is perceived. In the design industry, people will see how our team at Gage-Martin dresses. The New York Times, Home & Garden section 08.19.09 features India Hicks, a woman with great island style. 13 years ago she moved her family from the West Village in New York City to the Bahamas and embraced the relaxed attitude of the islands. Her style consists of mixing traditional and nontraditional items-- with an air of simplicity and elegance. Much of this style exists in Florida homes-- it's a feeling of tropical with ocean inspirations.

After reading the new feature in Veranda's September issue about the Loro Piana showroom opening in the D & D Building in New York, I made it my first stop on my last trip to the city. I've long been addicted to Loro Piana's clothes. A soft Loro Piana cashmere sweater can just turn a gloomy day into one of serenity and contentment. The Italian fabric house, after six generations of dominance in fashion, has now turned its attention to home decor, with consistent attention to craftsmanship and the most exquisite color sense in the industry. Their upholstery fabric launch is the most exciting fabric introduction to come along in decades. Up-to-the minute sizzle, but enduring. Can hardly wait to do my first Loro Piana room!

Designers Mark Badgley and James Mischka, business and life partners like most others in New York City spent their summers in the Hamptons, but they searched for a new second home and found one in Lexington, Kentucky. The classic and demure look of horse country was the overall inspiration for the house's design. They wanted to keep the house clean and free of color. The handsome leather chairs are comfortable and much like the chairs Gage-Martin Interiors has incorporated in many home libraries and offices.
